Half Hour Peking Duck Cooking Basics
You will have 30-40 minute class of learning the basic knowledge of how to prepare, cook and serve Peking ducks as well the long history of Peking duck making since the year of 1416 when the first Peking duck restaurant appeared in Beijing.
A Peking Duck is slaughtered, plucked, eviscerated and rinsed thoroughly with water. While it is hung, the duck is sprinkled with a layer of maltose syrup. The hung duck will be left to stand for 24 hours before it is hung in a hung oven for one-hour roasting. Roast until the fat from under skin has completely dripped out, the meat tender and the skin crispy. Sliced Peking ducks are served with being wrapped in thin Mandarin-style pancakes filled with scallions, crisp cucumber, and sweet bean sauce.
Hand-on Cooking and Roasting
You will have a hand-on experience of using a pole to hang a duck on the hook above the fire and roasted in a hung oven. The hung oven is designed to roast up to 10-20 ducks at the same time with an open fire fueled by hardwood from date trees. The ducks are roasted at a temperature of 270 for one hour roasting. You will also have a hand-on experience of getting a roasted duck out of the oven for eating.
Serving and Savoring Peking Duck
You will learn how to slice a Peking duck, how to wrap sliced ducks with a pancake filled with scallions, crisp cucumber, and sweet bean sauce. You will savor the roasted Peking duck. Several vegetable dishes are offered to accompany the duck. The remaining fat, meat and bones could made into a yummy broth.
At the end of your Peking duck cooking tour, you are returned to your downtown hotel.
